Pumpkin Mousse
- 1/4 cup canned pumpkin
- 1 JELL-O Vanilla Sugar Free Pudding Snack
- 3 Tbsp. COOL WHIP LITE Whipped Topping, thawed
- 1/8 tsp. vanilla extract
- 1/8 tsp. ground cinnamon
- 1/8 tsp. pumpkin pie spice
- 1 Tbsp. pecans, chopped
- 3 gingersnaps
- 8 fl oz (1 cup) fat-free milk
- MIX pumpkin, pudding, COOL WHIP, vanilla extract, cinnamon and pumkin spice.
- Stir until combined well.
- Spoon mixture into a bowl and sprinkle with pecans.
- SERVE mousse with gingersnaps.
- COMPLEMENT your snack with a glass of milk.
