Chili Stuffed Frankfurters Recipe
- 1 pound large frankfurters (6-8)
- 1 beaten egg
- 1 c. canned chili beans, liquid removed
- 1/2 c. chili sauce
- 2 tbsp. sliced green onion
- 1/2 teaspoon chili pwdr
- 1 c. cooked rice
- 1/2 c. shredded Monterey Jack cheese
- (2 ounce.) Corn chips
- Cut frankfurters lengthwise, cutting to but not through opposite side.
- Place in a shallow baking dish.
- In a mixing bowl stir together egg, chili beans, chili sauce, green onion, and chili pwdr.
- Toss lightly with rice.
- Mound mix into cut frankfurters.
- Cook, covered, on 100% power (high) for 4-8 min or possibly till heated through.
- Sprinkle cheese over top.
- Cook, uncovered, on high for 1-2 min or possibly till cheese is melted.
- Place corn chips around outer edge of baking dish.
- Makes 3-4 servings.
