Chocolate Banana Cake
- 2 (1 oz.) sq. unsweetened chocolate
- 1 c. butter or margarine, softened
- 2 3/4 c. sugar
- 3 eggs
- 3 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1 c. mashed bananas
- 2/3 c. buttermilk
- 1 Tbsp. vanilla extract
- 1 c. chopped pecans
- Chocolate Frosting (recipe follows)
- Place chocolate
- in
- top of a double boiler; bring water to a boil.
- Reduce
- heat
- to
- low; cook until chocolate melts. Set aside to
- cool.
- Cream butter, gradually add sugar, beating well with
- an
- electric
- mixer.
- Add eggs, 1 at a time, beating well after
- each addition.
- Combine flour, baking powder, soda and salt;
- add
- to
- creamed
- mixture
- alternately with banana, buttermilk
- and
- melted
- chocolate,
- beginning
- and ending with flour mixture.
- Mix
- well after each addition.
- Stir in vanilla and pecans.
- Spoon batter into
- 3
- (9-inch) greased and floured round cake pans.
- Bake at 350u0b0 for 30 minutes or until a wooden pick
- inserted
- in center comes out
- clean.
- Cool
- in
- pans
- 10 minutes;
- remove from pan and
- cool
- completely.
- Spread Chocolate Frosting between layers and on top and sides of cake.
