Lola Richard's Easy Potato Salad
- 4 -6 medium potatoes, cooked and cooled (with or without the skins)
- 3 -4 hard-boiled eggs, cooled
- 14 cup onion, finely diced (any kind)
- 14 cup sweet pickle, finely chopped
- 12 cup mayonnaise (or more if too dry)
- 1 teaspoon prepared yellow mustard
- salt and pepper
- Quarter the potatoes and eggs and put them in a large bowl.
- Mash them with a potato masher to a course consistancy.
- Add the onion, sweet pickles, mayo and yellow mustard and stir to combine.
- Add salt and pepper to taste.
- Sometimes I add a little finely diced cucumber if I have it.
- Sweet pickle relish (drained) can be substituted for the diced sweet pickles.
