Alaska Cod With Greek Walnut Salsa Recipe
- 6 x cod fillets - (6 ounce ea) thawed
- Salt to taste
- Freshly-grnd black pepper to taste
- Oil as needed
- 11/4 c. finely-minced tomatoes
- 1/2 c. finely-minced cucumbers
- 2 Tbsp. finely-minced olives
- 2 Tbsp. finely-minced red onions
- 1 Tbsp. lemon juice
- 1 tsp extra virgin olive oil
- 1 tsp minced fresh parsley
- 1/4 tsp chopped garlic
- 1 pch dry oregano
- 1/4 c. minced walnuts toasted
- Season cod fillets with salt and pepper.
- Saute/fry in oil in a non-stick or possibly heavy saute/fry pan over medium-high heat till fish just flakes when tested with a fork.
- To serve, divide cod between serving plates and top proportionately with salsa.
- Greek Walnut Salsa: Mix together all ingredients except walnuts till well combined.
- Season with salt and pepper; stir in walnuts just before serving.
- This recipe yields 6 servings.
