Pineapple Dessert

  1. Soak gelatin in cold water.
  2. Set aside.
  3. Boil until thick the egg yolks, pineapple and sugar.
  4. When thick, add gelatin; cook a few minutes longer.
  5. Remove from stove and cool.
  6. Beat egg whites until stiff; add 1 cup sugar, little at a time.
  7. Add vanilla and salt; fold the 1st ingredients into egg whites.
  8. Let cool slightly.
  9. Put into graham cracker crust.
  10. Use one package of crackers and about 1/4 of butter or oleo, melted.
  11. Put into a 2-quart square glass pan.
  12. Hold back about 1/2 cup of crackers. Pour top ingredients on crust.
  13. Put the 1/2 cup crackers on top of this.
  14. Add cherries on top of crackers.
  15. This is rich, will serve about 18.
  16. Makes a pretty dessert.
  17. That 18, depends on how big you cut it.
