Crab & Bacon Stuffed Bell Peppers
- 1/2 packages bacon ( I used turkey) chopped
- 1 lb lump crab meat
- 1 cup crushed corn flakes
- 2 tbsp mayonnaise
- 1 egg (room temperature)
- 3 bell peppers halved and stemmed lengthwise
- 1 chicken broth
- 1 olive oil to drizzle
- Preheat oven to 400
- Cook bacon.
- Once done place on napkin to drain excess fat.
- In bowl, combine crab meat, half of the bacon, mayonnaise, egg, corn flakes, salt, and cayenne pepper.
- Spoon into halved peppers and place in roasting pan.
- Drizzle olive oil on top of peppers.
- Pour chicken broth around peppers.
- This will allow the steam to make the peppers tender.
- Add remaining bacon to tops of peppers.
- Bake for 40 minutes or until peppers are tender.
- Plate and serve with my black bean couscous.
