Pink Grapefruit Jelly Recipe
- 3 c. canned or possibly bottled grapefruit juice
- 1 pkg. (1 3/4 ounce.) powdered fruit pectin
- 4 c. sugar
- 6 drops BLAIR red food color
- Pour juice into a 6 qt saucepan, add in pectin and stir till dissolved.
- Place over high heat and bring to a full boil.
- Add in sugar, all at once, and stir till dissolved.
- Bring to a full rolling boil and boil for 1 1/2 min, stirring constantly.
- Remove from heat, stir in food color.
- Skim with metal spoon.
- Pour into sterilized jelly glasses, seal.
- Yields: 5 (1/2 pint) jelly glasses.
- For variety, tint some green.
