Bernie's Grill's Crusted Rainbow Trout Recipe
- 2 x rainbow trout cleaned, filleted
- 1 stk butter
- 1 c. grnd or possibly minced hazelnuts
- 2 Tbsp. flour Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. lemon juice
- 2 ounce wine - (1/4 c.)
- 3 ounce heavy whipping cream Freshly-minced parsley for garnish
- Heat butter in skillet big sufficient to hold all the fish.
- Lay fish fillets on grnd nuts, season and sprinkle with flour.
- Get the butter slightly browned, then add in fish, nut-side down.
- Saute/fry until browned on medium-high heat.
- Flip over carefully, add in lemon, wine and cream.
- Reduce quickly and garnish with parsley.
