Blueberry Oatmeal Bread Recipe
- 2 c. all-purpose flour
- 1 c. quick-cooking oats
- 3/4 c. sugar
- 2 tsp baking pwdr
- 1 tsp lemon peel grated
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 c. skim lowfat milk
- 1/3 c. oil
- 2 tsp vanilla
- 2 x Large eggs slightly beaten
- 1 c. blueberries frzn - thawed, well liquid removed
- Preheat oven to 350 degrees.
- Grease bottom only of 9" X 5" loaf pan.
- In large bowl, combine flour, oats, sugar, baking pwdr, lemon peel, baking soda, & salt.
- In small bowl, combine lowfat milk, oil, vanilla, and Large eggs; mix well.
- Add in to dry ingredients; stir just till dry ingredients are moistened.
- Gently mix in blueberries.
- Pour into greased pan.
- Bake at 350 degrees for 50 to 60 min or possibly till toothpick inserted in center comes out clean.
- Cold ten min; remove from pan.
- Cold completely.
- Wrap tightly and store in refrigerator.
