Shakshuka:eggs in fiery tomatoes
- 1 packages cherry tomatoes
- 1 can roasted red peppers
- 1 small onion, chopped
- 1 tbsp garlic chopped
- 1 tbsp red pepper flakes
- 1 tbsp fresh parsley
- 1 1/2 tsp herb de provence
- 1 tsp thyme
- 1 1/2 tsp paprika
- 1 1/2 ground cumin
- 2 tbsp evoo
- 1 egg
- 1 tbsp shredded mozzarella
- Heat oil then add onions until soft then add red pepper flakes and cumin , paprika, thyme, herb de provence
- Next add garlic cook until fragrant then add roasted red peppers add cherry tomatoes until soft next add parsley
- Next put tomatoes in ramiken and make a well in the middle of the tomatoes next put whole egg on the well without breaking the yolk
- Now bake at 375 FOR 15 minutes remove and place mozzarella cheese around egg return to oven until cheese melts and bubble
