Sophie's Thai red curry breakfast wrap
- 1 tortilla/fajita wrap
- 2 eggs
- 1/2 tbsp Thai red curry paste
- 1/2 tsp soy sauce
- 1/2 tsp fish sauce
- 1 tsp lime juice
- 1/4 red chili, chopped and de-seeded
- 1 a few sprigs of coriander, chopped
- Mix all your ingredients except the wrap thoroughly.
- Cook your scrambled eggs in your preferred method - I love mine in a medium heat in a frying pan for approximately 4 minutes, stirring regularly.
- Serve in your wrap (or however you wish!)
- and enjoy!
