Tomato and Thyme Fish
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 (14 ounce) can chopped tomatoes
- 1 teaspoon light brown sugar
- 3 sprigs thyme, leaves stripped
- 1 tablespoon soy sauce
- 4 fillets white fish
- Heat the oil in a frying pan, add the onion then fry for 5-8 mins until just browned.
- Stir in the tomatoes, sugar, thyme and soy.
- Simmer for 5 minutes.
- Put the fish into the sauce.
- Cover and gently cook for 8-10 mins until the fish flakes easily.
- Serve.
