Tomato and Thyme Fish

  1. Heat the oil in a frying pan, add the onion then fry for 5-8 mins until just browned.
  2. Stir in the tomatoes, sugar, thyme and soy.
  3. Simmer for 5 minutes.
  4. Put the fish into the sauce.
  5. Cover and gently cook for 8-10 mins until the fish flakes easily.
  6. Serve.
