Microwave Ground Beef Stroganoff

  1. Place ground beef in a 2-quart microwave casserole; break up with fork.
  2. stir in onion and garlic.
  3. Cover and cook on High 5 to 6 minutes, or until beef is no longer red and onion is transparent; drain.
  4. Stir in soup, mushrooms, tomato paste, salt and pepper.
  5. Cover and cook on High 7 to 8 minutes, stirring once. Stir in sour cream.
  6. Cook on 60 for 1 minute.
  7. Sprinkle with parsley.
  8. Serve over rice or noodles.
