Sweet & Sour Meatless Meatballs

  1. Preheat the oven to 375 degrees F and grease a 9x13 pan.
  2. In a large bowl (or in your food processor), combine the meat crumbles, eggs, cheese, breadcrumbs, seasonings and olive oil.
  3. Use a cookie scoop (or a measuring tablespoon) to form the meatballs, and place them in the greased pan.
  4. Bake the meatballs at 375 degrees for 20 minutes.
  5. While the meatballs are in the oven, whisk together the barbeque sauce and apricot preserves in a small bowl until combined.
  6. Pour the sauce over the meatballs after theyve been in the oven for 20 minutes.
  7. Lower the oven temperature to 350 degrees F and continue baking for an additional 15-20 minutes.
