Sweet & Sour Meatless Meatballs
- 12 ounces, weight Meatless Meat Crumbles
- 2 whole Eggs, Beaten
- 1/2 cups Shredded Mozzarella Cheese
- 1 cup Breadcrumbs
- 1 teaspoon Parsley Flakes
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1/4 teaspoons Garlic Powder
- 2 Tablespoons Olive Oil
- 1- 1/2 cup Barbecue Sauce
- 1- 1/2 cup Apricot Preserves
- Preheat the oven to 375 degrees F and grease a 9x13 pan.
- In a large bowl (or in your food processor), combine the meat crumbles, eggs, cheese, breadcrumbs, seasonings and olive oil.
- Use a cookie scoop (or a measuring tablespoon) to form the meatballs, and place them in the greased pan.
- Bake the meatballs at 375 degrees for 20 minutes.
- While the meatballs are in the oven, whisk together the barbeque sauce and apricot preserves in a small bowl until combined.
- Pour the sauce over the meatballs after theyve been in the oven for 20 minutes.
- Lower the oven temperature to 350 degrees F and continue baking for an additional 15-20 minutes.
