Vegetable Beef Barley Soup by Audrey M
- 34 cup chopped onion
- 34 cup green beans, broken into 1 inch pieces
- 23 cup uncooked pearl barley
- 23 cup fresh whole kernel corn or 23 cup frozen whole kernel corn
- 1 12 cups water
- 1 teaspoon salt
- 1 teaspoon chopped fresh thyme or 12 teaspoon dried thyme leaves
- 14 teaspoon pepper
- 1 12 lbs beef, cubed
- 12 cup chopped green pepper
- 2 (14 1/2 ounce) cans beef broth
- 2 (14 1/2 ounce) cansdiced tomatoes with garlic
- 1 (8 ounce) can tomato paste
- Place beef cubes on the bottom of crockpot.
- In a medium bowl, mix all other ingredients.
- Pour over meat.
- Cook on low for 8 to 9 hours.
