Easy & Spicy Enchilada Bake
- 1 packages small flour tortillas (or corn tortillas if you prefer)
- 1 lb ground beef, chicken or pork
- 1 container of Philadelphia Southwest cooking cream (or Chipotle flavor if you want spicier)
- 1 small diced onion
- 1/4 each diced red and green peppers
- 1 tsp season salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup your favorite salsa
- 1 10 or 12 oz can of enchilada sauce
- 1 packages shredded cheddar or colby/jack cheese
- Brown meat with all seasonings.
- Add peppers and onions 3/4 way through cooking, then drain.
- Add cooking cream & mix.
- Preheat oven @ 400 .
- Mix salsa & enchilada sauce together.
- In a round pan or spring form pan lined with foil, put small amount of enchilada mixture on bottom.
- Take a flour tortilla & place on top.
- Spread meat mixture on tortilla, sprinkle some cheese, tortilla, then pour small amount of sauce again.
- Repeat steps until layers are even with top of pan, finishing with tortilla, sauce to cover whole layers and then cheese.
- Cover with foil & bake for 40 minutes, then serve with salad, sour cream and guacamole.
