Pina Colada rice

  1. Boil the coconut water, and pineapple juice with salt and crushed pineapple.
  2. Add margarine
  3. Preheat oven 400 Fahrenheit
  4. Add rice.
  5. Stir occasionally and keep covered.
  6. Watch it close the starch of the rice and sugars from the juice and fruit will cause it to be very thick.
  7. Boil rice till liquid are forming craters of bubbling liquid.
  8. Try some of the rice if its crunchy add water, if el dente add water in the rice.
  9. Cover, and remove from heat don't disturb for 15 minutes.
  10. Take a loaf pan, put margarine on sides and bottom of loaf pan.
  11. Pack the rice into pan and sprinkle with nutmeg.
  12. Bake 30 minutes.
  13. Let sit 10 minutes.
  14. Take rice out of pan and slice the rice serve.
