Pina Colada rice
- 16 1/2 oz coconut water
- 16 1/2 oz pineapple juice
- 4 cup Jasmine rice, or your favorite rice
- 1 tsp salt
- 1 large loaf pan
- 2 tbsp softened margarine
- 1/2 tsp ground nutmeg
- 1 cup water, if needed
- 20 oz can of crushed pineapple
- 2 tbsp margarine
- 1/2 stick margarine
- Boil the coconut water, and pineapple juice with salt and crushed pineapple.
- Add margarine
- Preheat oven 400 Fahrenheit
- Add rice.
- Stir occasionally and keep covered.
- Watch it close the starch of the rice and sugars from the juice and fruit will cause it to be very thick.
- Boil rice till liquid are forming craters of bubbling liquid.
- Try some of the rice if its crunchy add water, if el dente add water in the rice.
- Cover, and remove from heat don't disturb for 15 minutes.
- Take a loaf pan, put margarine on sides and bottom of loaf pan.
- Pack the rice into pan and sprinkle with nutmeg.
- Bake 30 minutes.
- Let sit 10 minutes.
- Take rice out of pan and slice the rice serve.
