Kale Slaw with Peanut Dressing

  1. Toss together kale, bell pepper, and carrots in a large bowl.
  2. Puree 1/4 cup peanuts, oil, and vinegar with the brown sugar and 1 teaspoon salt in a blender until smooth.
  3. Coarsely chop remaining 1/4 cup peanuts.
  4. Pour dressing over vegetables.
  5. Sprinkle peanuts on top, and serve immediately.
