Mary Ann's Bell Peppers Recipe
- 5 lg. stuffing bell peppers
- 1 lg. onion, minced
- 1 1/2 pound lean grnd beef
- 1/2 c. raw rice
- 1 egg
- Salt and pepper
- 2 sm. cans tomato sauce
- 2 tbsp. extra virgin olive oil
- 3 c. water
- Core out tops of bell peppers with serrated knife, remove seeds.
- Wash, set in pot of boiling water.
- Remove peppers.
- In medium bowl, mix meat, rice, salt, egg, minced onion.
- Stuff into bell peppers.
- In heavy iron pot saute/fry oil with onion till lightly sauteed.
- Add in tomato sauce, salt, water.
- Set bell peppers right side up.
- Cook 1 1/2 hrs basting sauce over top.
- Check to make sure sauce is abundantly sufficient.
