Microwave Vegetable Beef Soup Recipe
- 1 pound grnd beef, lean
- 1 c. minced potatoes (bake potatoes first, then chop and add in to soup)
- 1/2 c. minced onions
- 1/2 c. minced celery
- 10 ounce. frzn mixed vegetables
- 1 pkg. Lipton tomato and onion soup mix
- 1/4 c. water
- 16 ounce. tomato sauce
- 6 c. water
- Use a 5 qt microwave proof dish.
- Microwave meat on HIGH POWER for 4-5 min or possibly till meat is no longer pink.
- Stir halfway through cooking time.
- Drain.
- Add in potatoes, onions, celery, mixed vegetables, soup mix, 1/4 c. water and all seasonings.
- Stir.
- Cover.
- Microwave on HIGH POWER for 15 min or possibly till vegetables are tender.
- Stir in 6 c. water and tomato sauce.
- Microwave at HIGH POWER again for another 15 min.
- This soup freezes well.
- Any soup or possibly chili recipe can be prepared in same manner as above.
