Shepherds Pie
- 1 lb ground beef
- 14 cup onion, chopped
- 14 cup sweet pepper, chopped
- 1 (10 1/2 ounce) can vegetable soup
- 18 teaspoon salt
- 18 teaspoon thyme leaves, crushed
- 2 cups mashed potatoes
- Cook beef with oinons and sweet pepper.
- add rest of ingredients, except potatoes and mix.
- Pour into 1-1/2 quart casserole dish; spoon mashed potatoes around edge of casserole.
- Bake at 400 degrees F. for 25 minutes or until hot.
- Makes about 3 cups.
