Chicken Skewers with Brown Rice
- boneless skinless chicken breasts, cut into 3/4-inch pieces
- 1-1/2 qt. red onions, cut into 3/4-inch pieces
- 1-1/2 qt. red peppers, cut into 3/4-inch squares
- 1-1/2 qt. tomatoes, cut into 3/4-inch pieces Safeway 1 lb For $1.29 thru 02/09
- 1/2 cup Kraft Greek with Feta and Oregano Dressing
- 1-1/2 qt. hot cooked brown rice
- Thread each of 24 skewers with 4 oz.
- (115 g) chicken, and 1 oz.
- (30 g) of each vegetable.
- (Or, thread ingredients onto 1 skewer for trial recipe.)
- Refrigerate until ready to serve.
- For each serving: Grill 1 skewer 4 to 5 min.
- on each side or until chicken is done.
- Place on plate; drizzle with 1 tsp.
- (5 mL) dressing.
- Serve with 1/4 cup (50 mL) rice.
