Blue Cheese and Irish Cheddar Gougeres

  1. Preheat oven to 375 degrees F. Line baking sheet with parchment.
  2. Combine first 5 ingredients (white wine, water, butter, pepper, salt) in a heavy medium saucepan.
  3. Bring to boil over medium heat, stirring until butter is melted.
  4. Stir in flour; reduce heat to medium-low.
  5. Stir vigorously until mixture forms large dough clumps, about 1 minute.
  6. Remove from heat; cool 5 minutes.
  7. Meanwhile, whisk eggs in a medium bowl.
  8. Add beaten eggs a few tablespoons at a time, stirring until eggs are completely absorbed after each addition (dough will be seriously sticky).
  9. Mix in blue cheese.
  10. Using a heaping teaspoon of dough at a time, pinch a dime-sized amount of Irish cheddar into a ball.
  11. Wrap the dough around the cheese.
  12. Drop each gougere onto the prepared baking sheet about 1 apart.
  13. Bake gougeres until puffed, golden brown, and dry, about 30 minutes.
  14. If you need to make them ahead of time, store in an airtight container in the freezer and reheat in the oven.
