Cheesy Spinach Dip
- 2 -3 tablespoons butter
- 12 medium onion, chopped finely
- 1 lb fresh spinach leaves
- 2 cups shredded cheddar cheese
- 8 ounces cream cheese, cubed
- 2 tablespoons heavy cream
- 12 cup chopped pecans
- Saute onion in butter until carmelized.
- Add spinach and wilt for a few mintues.
- Add cream cheese, cheddar cheese, and cream.
- Stir until melted and blended together.
- Place cheese mixture in an oven-safe casserole dish (6 x 9).
- Top with pecans.
- Bake in 350 degree oven until browned on top and pecans toasted.
- Serve immediately.
