Gluten Free Pumpkin Cookies

  1. Preheat oven to 350F (180C).
  2. Sift dry ingredients together.
  3. Cream shortening and sugar.
  4. Add vanilla and pumpkin.
  5. Add dry ingredients and nuts.
  6. Beat until smooth.
  7. Shape cookies into 1 inch balls and place on a greased cookie sheet.
  8. Press flat with fork.
  9. Bake for 9 to 12 minutes.
