Roast Beef Stew
- 4 medium carrots, cut up
- 1 small onion, cut up
- 2 roma tomatoes, seeded and cut up
- 1 can green beans
- 2 quart beef stock
- 6 medium red potatoes, cubed
- 2 lb roast beef, cooked
- cut up meat into bite sized pieces, i used left over beef roast
- add all ingredients to large stock pan
- add enough water to cover ingredients completely.
- simmer on medium heat until veggies are tender.
- season to taste.
