Mini Taco Stuffed Peppers
- 1 lb ground beef
- 1 1/2 lb mini bell peppers
- 1/2 cup fresh cilantro chopped
- 1/2 tsp garlic
- 2 tbsp lime juice
- 1/2 cup sour cream
- 3/4 cup water
- 1 pack old el paso taco seasoning
- 1 cup cheddar cheese
- Preheat oven to 350 degrees .
- Slice off 1/3 of the pepper lengthwise.reserving for later use.Clean out seeds and the ribs.
- Wash them .chop resereved peppers finely.
- Save 3/4 cup.
- In a 10" skillet .
- Cook beef and reserved peppers over medium high heat.
- 5-7 minutes.
- Stirring occasionally.
- Until beef us brown.
- Drain.
- Stir in taco seasoning and water.
- Stirring occasionally.
- Cook over medium high heat 5-10 minutes.
- Let mixture cool slightly.
- Fill each pepperas full as possible with beef mixture and place on baking sheet.bake 13 -15 minutes.
- While peppers are baking make cilantro sause.
- In food processor pulse sour creme, ciltranto, garlic& lime juice.until smooth.
- I put mine in a zip loc bag.
- Snipped off corner when ready.
- Chill in Refrigerator.remove peppers from oven .
- Top with cheese.
- Return to oven 1-2 minutes.
- Or until melted.Drizzle sause over them...
