Mini Taco Stuffed Peppers

  1. Preheat oven to 350 degrees .
  2. Slice off 1/3 of the pepper lengthwise.reserving for later use.Clean out seeds and the ribs.
  3. Wash them .chop resereved peppers finely.
  4. Save 3/4 cup.
  5. In a 10" skillet .
  6. Cook beef and reserved peppers over medium high heat.
  7. 5-7 minutes.
  8. Stirring occasionally.
  9. Until beef us brown.
  10. Drain.
  11. Stir in taco seasoning and water.
  12. Stirring occasionally.
  13. Cook over medium high heat 5-10 minutes.
  14. Let mixture cool slightly.
  15. Fill each pepperas full as possible with beef mixture and place on baking sheet.bake 13 -15 minutes.
  16. While peppers are baking make cilantro sause.
  17. In food processor pulse sour creme, ciltranto, garlic& lime juice.until smooth.
  18. I put mine in a zip loc bag.
  19. Snipped off corner when ready.
  20. Chill in Refrigerator.remove peppers from oven .
  21. Top with cheese.
  22. Return to oven 1-2 minutes.
  23. Or until melted.Drizzle sause over them...
