Chinese Green Onion Pancake

  1. Dissolve salt in warm water.
  2. Put flour in a bowl.
  3. Add water.
  4. With a fork, kneed the dough until it becomes a ball.
  5. Let sit for 30 minutes.
  6. Chop scallions and set aside.
  7. When dough is set, divide into 4 equal portions.
  8. Put flour on surface and roll out one portion of the dough and sprinkle scallion, salt and Chinese five-spice powder and roll back into a ball.
  9. Then flatten it back into a pancake about a quarter inch thick.
  10. Repeat for the remaining portion.
  11. In a skillet, over medium - high heat, add oil until hot.
  12. Add pancake and fry on each side for about a minute.
  13. Let cool and cut into slices and serve with a chili soy sauce.
