Chinese Green Onion Pancake
- 2 cup all-purpose flour
- 1 cup near boiling water
- 2 scallions (chopped)
- 1 pinch salt
- 1 pinch pepper
- 1/2 tsp Chinese five-spice powder
- 1 oil
- Dissolve salt in warm water.
- Put flour in a bowl.
- Add water.
- With a fork, kneed the dough until it becomes a ball.
- Let sit for 30 minutes.
- Chop scallions and set aside.
- When dough is set, divide into 4 equal portions.
- Put flour on surface and roll out one portion of the dough and sprinkle scallion, salt and Chinese five-spice powder and roll back into a ball.
- Then flatten it back into a pancake about a quarter inch thick.
- Repeat for the remaining portion.
- In a skillet, over medium - high heat, add oil until hot.
- Add pancake and fry on each side for about a minute.
- Let cool and cut into slices and serve with a chili soy sauce.
