Simple Risotto

  1. In a large saucepan heat oil over medium heat.
  2. Add onion and cook until tender.
  3. Stir in garlic and cook until aroma is released.
  4. Add rice and cook for 1 minute.
  5. Add wine and stir until all the liquid is absorbed.
  6. Stirring continuously add in 1/2 cup stock at a time.
  7. Do not add next 1/2 cup until the previous one has been absorbed.
  8. Season with salt and pepper.
  9. Serve with freshly grated Parmesan cheese and pepper
