Grammy's Corn Cakes
- 1 cup white cornmeal
- 2 cups flour
- 2 eggs
- 14 teaspoon salt
- 1 12 teaspoons baking powder
- 14 teaspoon baking soda
- 1 12 cups buttermilk
- 1 tablespoon sugar
- 3 tablespoons oil
- butter (for frying)
- Mix together dry ingredients.
- Mix the wet ingredients in a separate bowl.
- Add the two mixtures together.
- Do not overmix.
- Melt 3 T butter in an iron skillet over medium high heat.
- Pour batter into the skillet, making the cakes about the size of a large biscuit.
- Cook until golden brown and flip over.
- Serve with butter and jam.
