Backpack Banana Bran Muffins Recipe
- 2 x RIPE DOLE BANANAS, PEELED
- 1 c. BRAN CEREAL, NOT FLAKES!
- 1/4 c. Lowfat milk
- 2 x Large eggs
- 1 c. BROWN SUGAR
- 1/2 c. BUTTER Or possibly MARGARINE, MELTED
- 1 tsp VANILLA
- 1 1/4 c. FLOUR
- 2 tsp BAKING Pwdr
- 1 tsp Grnd CINNAMON
- 1/2 tsp SALT
- PUREE BANANAS IN BLENDER TO EQUAL 1 1/4 C..
- IN A SMALL BOWL, MIX BRAN AND Lowfat milk TO SOFTEN SLIGHTLY.
- Add in CEREAL Mix TO BLENDER ALONG WITH Large eggs, SUGAR, BUTTER AND VANILLA.
- BLEND AND STIR Till WELL MIXED.
- IN A LARGE BOWL, COMBINE REMAINING INGREDIENTS.
- POUR IN BANANA Mix.
- STIR Till JUST BLENDED.
- POUR INTO GREASED 2 1/2 INCH MUFFINS C.. BAKE AT 350 DEG F. FOR 25 TO 30 Min.
- REMOVE FROM PAN AS SOON AS DONE Cold ON WIRE RACK Or possibly EAT Hot.
