A.C.'S Potato Rolls Recipe

  2. Soften yeast in water.

  4. Place potatoes, sugar, shortening and salt in large bowl; stir in scalded lowfat milk.

  6. Let cold to lukewarm; add in Large eggs and yeast; mixing well.

  8. Sift about 6 c. flour into mix; stir till dough is stiff sufficient to knead.
  9. 5.
  10. Turn out onto lightly floured surface; knead, gradually adding flour till dough doesn't stick to hands and is smooth and elastic.

  12. Shape dough into ball; place in greased bowl; turning dough to bring greased surface to top.
  13. 7.
  14. Cover with towel; let stand in hot, draft-free place till doubled.
  15. 8.
  16. Shape dough into rolls; place in greased muffin c. and let rise till double.
  17. 9.
  18. Bake in preheated 400'F.
  19. oven 15 to 20 min; cold on racks.
  20. 10.
  21. Brush tops with melted butter.
  22. NOTE: For interesting variations, use mashed sweet potatoes or possibly squash instead of regularpotatoes.
