Sweet and Savory Shrimp Recipe

  1. * if you're using tamarind juice, omit hot water.
  2. Combine tamarind cubes with the hot water, set aside for 1-2 minutes.
  3. Then squish the tamarind 4-5 times with a spoon or with your finger until the water becomes muddy.Set aside.
  4. Using a pair of scissors, cut the shrimp along its back and clean the vein out.
  5. Rinse and set aside.
  6. Pour tamarind juice into the shrimp, add the salt.
  7. Mix them all together until it coats evenly.
  8. Set aside for 15-20 minutes.
  9. Heat the oil in a wok with medium high heat.
  10. When it's ready, stir-fry the shrimp altogether in the oil for 2-3 minutes.
  11. Set aside.
  12. Using a clean wok, melt the margarine in medium high heat and stir-in the sweet soy sauce, lemon juice and the shrimp.
  13. Toss well and cook for another 2-3 minutes and serve.
  14. Garnish with chives or serve on a bed of lettuce.
