Sweet and Savory Shrimp Recipe
- - 1 lbs shrimp (with shell on)
- - 2 tbsp tamarind
- - 3 tbsp hot water
- - 2 tsp salt
- - 1 cup cooking oil
- The Sauce:
- - 3 tbsp margarin
- - 3 tbsp sweet soy sauce
- - 2 or 3 tbsp lemon juice
- * if you're using tamarind juice, omit hot water.
- Combine tamarind cubes with the hot water, set aside for 1-2 minutes.
- Then squish the tamarind 4-5 times with a spoon or with your finger until the water becomes muddy.Set aside.
- Using a pair of scissors, cut the shrimp along its back and clean the vein out.
- Rinse and set aside.
- Pour tamarind juice into the shrimp, add the salt.
- Mix them all together until it coats evenly.
- Set aside for 15-20 minutes.
- Heat the oil in a wok with medium high heat.
- When it's ready, stir-fry the shrimp altogether in the oil for 2-3 minutes.
- Set aside.
- Using a clean wok, melt the margarine in medium high heat and stir-in the sweet soy sauce, lemon juice and the shrimp.
- Toss well and cook for another 2-3 minutes and serve.
- Garnish with chives or serve on a bed of lettuce.
