Canned Mock Pineapple

  1. Hot Pack -- Peel zucchini and either cut into 1/2 inch cubes or shred.
  2. Mix zucchini with other ingredients in a large saucepan and bring to a boil.
  3. Simmer 20 minutes.
  4. Fill hot jars with hot mixture and cooking liquid, leaving 1/2 inch head space.
  5. Remove air bubbles.
  6. Wipe jar rims.
  7. Adjust lids.
  8. Process in a boiling water bath.
  9. Half-pints or pints for 15 minutes.
