Fig Aniseed Muffins

  1. Preheat oven to 375 degrees F.
  2. Grease muffin tins or line with paper cups.
  3. Whisk together egg, milk, oil and anise extract in a large bowl.
  4. In a separate bowl combine flours, baking powder, salt, sugar and aniseeds.
  5. Stir with a fork.
  6. Add dry ingredients to liquid and stir until evenly moistened.
  7. Stir in figs and pour into muffin cups.
  8. Bake 15 - 20 minutes or until tester comes out clean.
