Fig Aniseed Muffins
- 1 egg
- 1 cup milk
- 14 cup vegetable oil
- 2 teaspoons anise extract
- 1 14 cups flour
- 12 cup whole wheat flour
- 1 tablespoon baking powder
- 12 teaspoon salt
- 2 tablespoons sugar
- 1 tablespoon anise seed
- 12 cup dried fig, chopped
- Preheat oven to 375 degrees F.
- Grease muffin tins or line with paper cups.
- Whisk together egg, milk, oil and anise extract in a large bowl.
- In a separate bowl combine flours, baking powder, salt, sugar and aniseeds.
- Stir with a fork.
- Add dry ingredients to liquid and stir until evenly moistened.
- Stir in figs and pour into muffin cups.
- Bake 15 - 20 minutes or until tester comes out clean.
