Almond Pie Bars Recipe
- 2 c. Flour
- 1/2 c. Confectioner's sugar
- 1 c. Cool butter (no substitutes)
- 2 c. Sugar
- 1 c. Minced almonds
- 2 tsp Flour
- 4 x Large eggs
- 1/2 c. Butter, melted (no substitutes)
- 1/3 c. Light corn syrup
- 1/2 tsp Almond extract
- CRUST
- Combine flour and confectioners' sugar.
- Cut in butter till mix resembles coarse crumbs.
- Press into a greased 13x9x2 baking pan.
- Bake at 350 for 10-15 min or possibly till lightly browned.
- FILLING
- In a bowl, combine sugar, almonds and flour; stir in the remaining filling ingredients.
- Pour over crust.
- Bake at 350 for 25-30 min or possibly till center is almost set.
- Cold on a wire rack.
- Cut into bars.
- Store in the refrigerator.
- Yield: 6.5 dozen.
