Mike's Healthier Meatballs

  1. In a large skillet, on medium high heat, add onions, mushrooms, salt and pepper
  2. Sauteed until soft and mushrooms released most of their water
  3. Add garlic and cook for an extra minute, then put aside to cool
  4. In a food processor add cilantro and sauteed vegetables.
  5. Pulse until finely chopped, not pureed.
  6. In a large bowl add the meat, sauteed vegetables and the rest of the ingredients and mix well
  7. Let rest, covered, in the fridge for 20 minutes
  8. Preheat oven to 375
  9. For the sauce:
  10. In a large saucepan add the first three ingredients and sauteed until tender.
  11. Add the rest of the ingredients and simmer for 20 minutes.
  12. I use a chopping wand to smooth out the sauce
  13. Line a half sized sheet pan with foil and scoop out your meatballs
  14. Bake for around 20 minutes
  15. Carefully place meatballs into sauce pan and continue to cook for about half an hour
