Vegetarian Fried Spring Rolls
- 2 Green peppers
- 1 Carrot
- 1 pack Cellophane noodles (harusame)
- 5 Shiitake mushrooms
- 1 Salt (to taste)
- 1 Soy sauce (to taste)
- 1 Sesame oil (to taste)
- 8 sheets Spring roll wrappers
- 1 equal parts flour and water (as needed)
- Cut the green peppers, carrots and mushrooms into thin strips.
- Rehydrate the harusame and chop into bite-sized pieces.
- Heat sesame oil in a frying pan and fry the green peppers, carrots and mushrooms.
- When they are slightly cooked, add the cellophane (harusame) and stir fry.
- Add salt and soy sauce while stirring.
- On a spring roll wrapper, evenly place the filling from step 2 and spread flour dissolved in equal amount of water along the edge of the wrapper and roll it up.
- Place the spring rolls on a frying pan with oil, and fry until they are browned on both sides.
