Spicy Peanut Pork
- 4 boneless pork chops, well trimmed
- salt and pepper
- 4 -6 green onions, cut in 1 inch diagonal slices
- 8 ounces snow peas, strings removed
- 1 tablespoon fresh ginger, minced
- 3 garlic cloves, crushed and minced
- 14 cup creamy peanut butter
- 1 tablespoon sugar
- 1 tablespoon soy sauce (I use Tamari)
- 18 teaspoon cayenne pepper
- Cook seasoned pork approx 4 minutes on each side in lightly greased saute pan.
- Transfer pork to platter, keep warm.
- In same skillet add green onions and snow peas, saute for 2 to 3 minutes.
- Stir in garlic and ginger, cook 1 minute.
- Return pork to pan.
- Meanwhile mix remainder of ingredients in bowl with 3/4 cup water (or stock).
- Pour mixture in skillet, heat until boil.
- Serve with steamed rice.
