Almond Gelatin Squares In Fruit Recipe
- 4 tsp Unflavored Gelatin
- 1/2 c. Cool Water
- 1 1/2 c. Boiling Water
- 3/4 c. Nonfat Dry Lowfat milk
- 1/2 c. Sugar
- 1 tsp Almond Extract
- 1/4 tsp Grnd Cinnamon
- 1 x Pear, peeled,cored,cubed
- 1 c. Seedless Red Grapes
- 2 x Kiwi Fruit, peeled and sliced
- 1 x Orange, peeled,sectioned
- 1 1/3 c. Pineapple Chunks
- 1/4 c. Orange Juice
- In a small saucepan, combine the gelatin and cool water.
- Add in the boiling water and stir till the gelatin is completely dissolved.
- Place over medium heat and bring to a boil, stirring constantly.
- Gradually whisk in the dry lowfat milk and sugar and return to a boil.
- Stir in the almond extract and cinnamon.
- When the cinnamon is dissolved, pour the mix into an 8 inch square pan.
- Cover and chill till hard, about 1 hour.
- In a large bowl, combine the pear, grapes, kiwifruits, orange, pineapple and orange juice.
- Gently toss to mix well.
- To serve, cut the gelatin into 1 inch squares, add in to the fruit and toss gently.
- Divide among 4 individual bowls.
- NOTES : Kiwifruits, oranges and pineapples are all excellent sources of vitamin C.
