Raspberry Mint Cooler

  1. In a large sauce pan bring 3 cups of water, mint, and sugar to a boil.
  2. Reduce heat and simmer uncovered for 15 minutes.
  3. Stir in raspberries, lemonade concentrate, and remaining water.
  4. Refrigerate overnight.
  5. Strain liquid into a large pitcher.
  6. Take the remaining raspberries and mint leaves and press through a sieve to collect remaining juices.
  7. Discard the seeds and leaves.
  8. Add collected juices to the pitcher.
  9. Serve over ice.
