The Ultimate Grilled Cheese Sandwich (Saveur)

  1. Spread butter evenly on both sides of each slice of bread.
  2. Put half the cheese on one slice of bread and half on another.
  3. Top each with a remaining slice of bread.
  4. Heat a 12-inch cast-iron skillet over medium-low heat.
  5. Add the sandwiches to the skillet and cook, flipping once with a metal spatula, until golden brown and crusty on both sides, 9-10 minutes each side.
  6. Transfer the sandwiches to a cutting board and slice in half (on diagonal) with a knife.
