Turkey Spinach Meatloaf
- 1 whole Onion, Chopped
- 2 cloves Garlic, Chopped
- 1 Tablespoon Olive Oil
- 2 whole Eggs
- 1/2 cups Milk
- 1/2 teaspoons Basil, Dried
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 10 ounces, weight Frozen Spinach, Thawed And Drained
- 2 pounds Ground Turkey
- 1- 1/4 cup Dry Bread Crumbs
- 2 teaspoons Lemon Juice
- 1/2 cups Ketchup
- 2 Tablespoons Butter
- Preheat oven to 350.
- Butter a large baking pan.
- Cook onion and garlic in oil until soft.
- Whisk eggs with milk, basil, salt and pepper.
- Add spinach, onion, turkey, bread crumbs and lemon juice to egg mixture.
- Mix well.
- Turn the mixture out into a pan and form into 9x5 loaf.
- Brush with ketchup and bake for 30 min.
- Melt butter and baste loaf with butter and continue to bake, basting occasionally until well browned, another 30-35 minutes.
