Mango-Raisin Bread
- 1 cup mango puree
- 1 34 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 12 teaspoon ginger
- 12 teaspoon salt
- 14 teaspoon nutmeg
- 12 cup butter, soft
- 1 14 cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 34 cup raisins
- Combine dry ingredients.
- Using medium speed beat butter and sugar till fluffy.
- Beat in eggs one at a time till blended.
- Beat in vanilla and margarine.
- Stir in flour mixture just till moist.
- Fold in raisins.
- Spoon into loaf pan and bake at 350 for 1 1/4 hours.
- Cool in pan 10 minutes.
