Spanish Rice

  1. Saute onion in oil in a heavy saucepan over moderate heat 5-8 minutes until limp.
  2. Add green pepper and stir-fry 5 minutes.
  3. Stir in rice and chili powder and brown rice lightly.
  4. Add remaining ingredients, chopping up tomatoes, cover, and simmer 20 minutes.
  5. Uncover and cook 5 minutes longer.
  6. VARIATION
  7. Baked Spanish Rice with Cheese: Brown vegetables and rice in a flameproof casserole, add remaining ingredients and 1/2 cup grated sharp Cheddar cheese.
  8. Mix lightly, cover, and bake 1/2 hour at 350F.
  9. ; uncover and bake 5 minutes longer.
  10. Serve as a main dish.
