Cheesy Corn Casserole
- 1 (12 oz.) can whole kernel corn
- 1 small onion, chopped
- 1 green pepper, chopped
- 3 Tbsp. margarine
- 3 Tbsp. flour
- 2 c. milk
- 1 c. grated New York sharp cheese
- 1 tsp. sugar
- salt and pepper
- 2 eggs, well beaten
- 1 c. buttered bread crumbs
- Saute onion and green pepper until onion is transparent.
- Stir in flour until smooth and then add milk gradually, stirring constantly.
- Cook and stir until thickened.
- Remove from heat; add cheese, salt, pepper and sugar.
- Stir together, then add beaten eggs.
- Pour into greased 7 x 10-inch Pyrex casserole.
- Top with bread crumbs which have been tossed with 2 teaspoons of melted margarine.
- Set in shallow pan of hot water.
- Bake in 350u0b0 oven for 45 minutes.
