Sweet Potato Skewers

  1. Preheat grill to medium heat for direct cooking.
  2. Peel sweet potatoes; cut into 1 inch chunks.
  3. Thread 5-6 sweet potato chunks onto each skewer.
  4. Brush with olive oil.
  5. For glaze, in a small saucepan, melt butter over medium heat.
  6. Stir in brown sugar until dissolved.
  7. Mix in syrup and nutmeg.
  8. Cook until smooth; set aside.
  9. Place potato skewers on oiled grill rack.
  10. Grill for 20 minutes or until tender, flipping every 5 minutes.
  11. Brush with glaze during the last 3 minutes of grilling.
