Sweet Potato Skewers
- 6 Skewers
- 4 medium Sweet potatoes
- 1 tbsp Olive oil
- 2 tbsp Butter
- 1/4 cup Brown sugar (packed)
- 2 tbsp Maple syrup
- 1234 tsp Ground nutmeg (1/8)
- Preheat grill to medium heat for direct cooking.
- Peel sweet potatoes; cut into 1 inch chunks.
- Thread 5-6 sweet potato chunks onto each skewer.
- Brush with olive oil.
- For glaze, in a small saucepan, melt butter over medium heat.
- Stir in brown sugar until dissolved.
- Mix in syrup and nutmeg.
- Cook until smooth; set aside.
- Place potato skewers on oiled grill rack.
- Grill for 20 minutes or until tender, flipping every 5 minutes.
- Brush with glaze during the last 3 minutes of grilling.
