Keto Friendly Sandwich
- 1 cucumber
- 2 tbsp boursin or allouette herbed cheese
- 5 slice good quality deli meat
- Peel strips of skin off of the cucumber, make it look like it's striped.
- Cut the cucumber in half.
- Cut the cucumber in half again along the length of the cucumber.
- Scoop out all of the seeds with a spoon.
- I use a grapefruit spoon, it's pretty efficient.
- In the top hollowed out half spread the cheese of your choice.
- In the bottom half place your deli meat.
- I usually use Boar's Head buffalo chicken or chipotle chicken.
- Place the 2 halves on top of each other sandwich style.
- Enjoy!
