Barry Steeve's Cheesecake Recipe
- 1 1/2 lbs. ricotta cheese
- 16 ounce. cream cheese
- 1 c. sugar
- 6 Large eggs
- 6 tbsp. flour
- 1 pt. lowfat sour cream
- 1 tbsp. vanilla
- 1 tbsp. lemon juice
- Mix Ricotta cheese, cream cheese and sugar till creamed.
- Beat in flour, lowfat sour cream, vanilla and lemon juice.
- Add in Large eggs, one at a time and beat 5 min between each egg.
- Grease and flour 10" spring form cake pan.
- Mix ingredients for crust and press on bottom and along sides.
- Pour cheese mix over crust.
- Bake 1 hour at 350 degrees.
- Turn off oven and let set for another hour without opening door.
- Refrigeratefor several hrs.
